These pastel treats get their hue from a recently popular ingredient called ube. Although this highly sought-after ingredient is a root vegetable, it’s mostly bakers who are embracing its versatility.
Ube is a purple sweet potato found in tropical regions of South America. It’s mild flavor and hypnotic color makes it a commodity for confections and is landing it as one of the biggest food crazes as of late.
Vegetable usage is often confined to savory or nutritional dishes, but expanding beyond the traditional “healthy” uses is the best way to do these ingredients justice.
